Delish Chewy Vegan Cookies Recipe


  • 1 cup coconut oil soft
  • 1 and ¾ cups brown sugar
  • 2 ¼ cups flour I used 1 ¼ white and 1 cup whole wheat but you could use all white flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • 1 teaspoon sea salt
  • ¾ cup oats
  • dash of pure vanilla extract
  • 2.5 tablespoons ground flax meal mixed with ¼ cup almond milk or water we always use almond milk, other nut milks would likely work as well.  Let sit for about 10 minutes until the flax meal has absorbed the liquid and is noticeably thicker.


  1. Preheat your oven to 375 degrees and line a baking sheet with parchment paper (not wax paper).
  2. In a stand mixer combine the wet ingredients until smooth then slowly mix in the dry.  Be careful to not over mix the batter.
  3. Make uniform sized balls and place them on the parchment paper. They will spread only a little bit.
  4. Bake for 8-12 minutes depending on how your oven heats and the size of the cookies.
