Carrot Cake Whoopie Pies Recipe


  • 1 package 15 oz Carrot Cake
  • 1/2 cup Flour
  • 1/2 cup Water
  • 1/3 cup Oil
  • 3 Eggs
  • 1 tub Cream Cheese Frosting
  • Wilton Sparkle Gels in Orange and Green optional
  • Edible Easter Grass


  1. Preheat oven to 350 and line a baking sheet with parchment paper.
  2. In a mixing bowl, add cake mix and flour and mix well.
  3. Add water, oil and eggs and mix until combined.
  4. Spoon onto prepared baking sheet (I use a 2 Tablespoon portion scoop) and gently spread the batter with the back of the scoop into a 2.5" circle.
  5. Bake for 12 minutes and cool on a cooling rack.
  6. When completely cool, frost the bottom of one whoopie pie and press another onto the frosting to create a sandwich.
