Ingredients

  • Pumpkin Bread Ingredients:
  • 1-¾ cup all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • ¾ cup pumpkin puree
  • 1-½ cups granulated sugar
  • ½ cup vegetable oil
  • cup water
  • 2 eggs
  • Cream Cheese Frosting Ingredients
  • ½ brick 4 oz, cream cheese, softened
  • ¼ cup butter softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 1-3 Tablespoons half and half or milk

Instructions

  • Preheat your oven to 350 degrees F and grease and flour a loaf pan. Set aside.
  • In a small bowl, combine flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Mix well and set aside.
  • In a larger mixing bowl, add pumpkin puree, sugar, oil, water and eggs and mix well. Add flour mixture and mix just until combined. Spread batter into prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Let stand to cool completely before frosting.
  • Cream Cheese Frosting Directions:
  • Beat together cream cheese, butter, vanilla and powdered sugar. Add half and half or milk if necessary to thin the icing a bit to spread easier. Spread on top of bread and slice to serve.

Notes

Makes 1 loaf of bread, which serves about 8.
