Preheat oven to 350 degrees F and line an 8x8 baking pan with parchment paper and set aside.
Add ½ cup white chocolate chips and butter to a microwave safe bowl. Microwave at 50% power for 1 minute. Stir well. If chocolate and butter is not melted, return to the microwave at 50% power for 30 seconds, stirring after each interval until melted and smooth. Set aside.
Add brown sugar, egg yolks, pumpkin puree and vanilla to a mixing bowl and beat well. Stir in melted chocolate and butter. Add flour, pumpkin pie spice and salt and mix until just combined. Add remaining chocolate chips and stir until combined. Spoon batter into prepared pan and spread evenly.
Bake for 30-35 minutes or until edges are browned and center is set when a toothpick is inserted in the center. Remove from oven and let stand to cool completely.
Remove blondies from the pan by lifting the parchment paper out of the pan. Cut the blondies into squares and serve.
