Orange Cranberry Bread Recipe

This Orange Cranberry Bread Recipe is the best dessert bread for Christmas desserts, but is light enough for a sweet breakfast and brunch!

Ingredients

  • 2 cups all purpose flour
  • non stick baking spray with flour
  • ¾ cup SPLENDA granulated
  • ¼ cup SPLENDA Brown Sugar Blend
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup butter cold, cut into small pieces
  • ¾ cup orange juice
  • 15 ounce Mandarin oranges drained thoroughly
  • 1 egg
  • 1 cup dried cranberries

Instructions

  • Preheat your oven to 350 degrees F and spray a loaf pan with non-stick cooking spray with flour. You can use PAM or Baker's Joy.
  • Combine the flour, SPLENDAs, salt, baking soda and butter in a stand mixer or large bowl and beat until you have fine crumbs. This will take a while!
  • Add the orange juice and egg and beat on low speed until the mixture is just combined.
  • Add Mandarin oranges and cranberries and stir by hand.
  • Bake in the preheated oven for 1 hour and 5 minutes. Rotate the pan halfway through the cooking time to insure even cooking.
  • Let it cool for at least 30 minutes before cutting or it will fall apart!
