Orange Cranberry Bread Recipe
This Orange Cranberry Bread Recipe is the best dessert bread for Christmas desserts, but is light enough for a sweet breakfast and brunch!

- 2 cups all purpose flour
- non stick baking spray with flour
- ¾ cup SPLENDA granulated
- ¼ cup SPLENDA Brown Sugar Blend
- ½ teaspoon salt
- ½ teaspoon baking soda
- ½ cup butter cold, cut into small pieces
- ¾ cup orange juice
- 15 ounce Mandarin oranges drained thoroughly
- 1 egg
- 1 cup dried cranberries
Preheat your oven to 350 degrees F and spray a loaf pan with non-stick cooking spray with flour. You can use PAM or Baker's Joy.
Combine the flour, SPLENDAs, salt, baking soda and butter in a stand mixer or large bowl and beat until you have fine crumbs. This will take a while!
Add the orange juice and egg and beat on low speed until the mixture is just combined.
Add Mandarin oranges and cranberries and stir by hand.
Bake in the preheated oven for 1 hour and 5 minutes. Rotate the pan halfway through the cooking time to insure even cooking.
Let it cool for at least 30 minutes before cutting or it will fall apart!
