Creamy Italian Sausage Pasta with Pumpkin

This Creamy Italian Sausage Pasta with Pumpkin is the perfect comfort food for chilly fall evenings.

Ingredients

  • 1 lb ground Italian sausage
  • ½ cup diced onion
  • 1 tablespoon minced garlic
  • 15 oz pumpkin puree
  • ½ cup sour cream
  • ½ cup half and half
  • 1-½ cups chicken broth
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cinnamon
  • 12 oz cavatappi pasta cooked and drained
  • 2 cups fresh spinach leaves
  • 2 tablespoons shredded parmesan cheese

Instructions

  • First, add sausage, onion and garlic to a large skillet and heat over medium heat, breaking apart sausage and mixing ingredients until sausage is browned.
  • Stir in pumpkin, sour cream, half and half and chicken broth. Then stir in the spices
  • .
  • Over medium low heat, bring to a boil and reduce heat to low, stirring occasionally heating for about 5 minutes.
  • Stir in pasta and spinach until spinach is wilted. Top with cheese and serve hot.

Notes

I used a 10" skillet, but it was a rather tight squeeze. If you want less of an opportunity to spill and make a mess, maybe try a large pan/stockpot.
