Chicken Macaroni Salad

This creamy Chicken Macaroni Salad recipe makes a great pasta salad side dish recipe for lunches and dinners!

Ingredients

  • 8 oz elbow pasta, cooked and rinsed with cold water
  • 2 cups chicken breast cooked and cut into small cubes
  • ½ cup real mayonnaise
  • ¼ cup greek yogurt
  • ½ cut red bell pepper diced
  • 2 hard boiled eggs diced
  • 1 teaspoon granulated sugar
  • 1 teaspoon prepared mustard
  • salt and pepper

Instructions

  • Add macaroni, chicken, mayonnaise, yogurt, red bell pepper, eggs, sugar and mustard to a bowl and mix well. Season with salt and pepper. Serve immediately or cover and refrigerate until ready to serve.
  • If you cover and serve later, the mayonnaise mixture will get soaked up by the pasta but it will still be delicious!
