Cheesy Rice with Ham

- 2 tablespoon oil
- ¼ cup onion diced
- 1 tablespoon garlic minced
- ¾ cup white rice
- 1-½ cup chicken broth
- 1 cup ham chopped
- 1 teaspoon oregano dried
- 1 cup cheddar cheese shredded
- 2 tablespoon parsley chopped fresh , optional for serving
Add oil, onion and garlic in a skillet and mix well. Heat over medium low heat until onions are translucent.
Add in the rice, broth, ham and oregano and bring to a boil. Then reduce heat to a simmer and cover.
Cook for 15-20 minutes, or until the rice is tender and most of liquid is absorbed.
Stir in half of the shredded cheddar cheese.
Sprinkle the remaining cheddar cheese on top and cover, continuing to cook until melted, about 1-2 minutes.
Sprinkle with chopped fresh parsley, if desired, before serving.
