Cheesy Rice with Ham

Ingredients

  • 2 tablespoon oil
  • ¼ cup onion diced
  • 1 tablespoon garlic minced
  • ¾ cup white rice
  • 1-½ cup chicken broth
  • 1 cup ham chopped
  • 1 teaspoon oregano dried
  • 1 cup cheddar cheese shredded
  • 2 tablespoon parsley chopped fresh , optional for serving

Instructions

  • Add oil, onion and garlic in a skillet and mix well. Heat over medium low heat until onions are translucent.
  • Add in the rice, broth, ham and oregano and bring to a boil. Then reduce heat to a simmer and cover.
  • Cook for 15-20 minutes, or until the rice is tender and most of liquid is absorbed.
  • Stir in half of the shredded cheddar cheese.
  • Sprinkle the remaining cheddar cheese on top and cover, continuing to cook until melted, about 1-2 minutes.
  • Sprinkle with chopped fresh parsley, if desired, before serving.
