Preheat oven to 350 and grease a 12 cup muffin tin with non stick cooking spray.

In a small bowl, mix flour, cocoa powder, and baking powder. Set aside.

Beat butter and sugar together in a mixing bowl for 2 minutes. Add eggs, oil, coffee and vanilla and beat well. Add flour and beat until just combined.

Use a 2 tablespoon portion scoop to scoop batter into prepared pan. Sprinkle with chocolate chips.

Bake for 8-12 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and let set for 2 minutes before removing from pan and finishing cooling on a cooling rack.
