Preheat oven to 350
Add flour, butter, sugar, salt and 3 tablespoons of water in a food processor. Process for 15 seconds. Add water, 1 tablespoon at a time, processing for 10 seconds after each addition until dough forms.
Divide dough in half and roll onto a floured surface. Place into the bottom of an 8x8 square pan. Top with filling. Use a brush to add egg wash to the edges of the crust.
To make top crust, roll the remaining dough onto the floured surface. Use a cutting wheel to cut 10, ½" strips. Place five strips onto the top of the filling and fold back every other strip.
Place remaining strips onto the top, one at a time, folding back every other strip to make a basket pattern. Seal the edges of the crust with a fork and trim if necessary.
Add egg to top crust with a brush. Sprinkle with coarse sugar if desired.
Bake for 20 minutes or until golden brown. Remove from oven and cool until just warm before cutting and serving.
