Oatmeal Walnut Apple Sour Cream Bars

Oatmeal Walnut Apple Sour Cream Bars are the ultimate breakfast treat, but these easy Apple Bars are the perfect dessert bars too!

Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar packed
  • 2 cups oatmeal quick cooking is fine
  • 1 cup all purpose flour
  • 1 cup walnuts chopped
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon ground
  • 1 cup sour cream light is fine
  • ¾ cup sugar
  • 2 tablespoons all purpose flour
  • 1 egg
  • 2 cups apples shredded (leave the peel on, it's about 2 apples) I use my food processor, but you could also grate them

Instructions

  • Heat Oven to 350 degrees F. 
  • Combine butter and brown sugar in a mixing bowl and mix until creamy, usually about 3-5 minutes. Scrape bowl down a few times to ensure even whipped mixture.
  • Add oatmeal, flour, walnuts, baking soda and cinnamon. Mix until combined.
  • Press half of the crust mixture into the bottom of an ungreased 13x9 pan.
  • Bake 8-12 minutes or until golden brown.
  • Combine all filling ingredients and mix well by hand.
  • Spoon over the hot crust and spread evenly.
  • Flatten the remainder of the crust in small chunks in the palm of your hand and place on the filling.
  • Bake at 30-35 minutes until top is golden brown and center is set. Cool completely before cutting. Store in the fridge.
