Cranberry Pinwheel Cookies Recipe for Christmas

Cranberry Pinwheel Cookies Recipe is an awesome holiday cookie! These easy Christmas cookies are quick to make with fresh cranberries and peanuts!

Ingredients

  • ½ cup butter softened
  • ¾ cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1-½ cups flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 3 tablespoons brown sugar
  • 1 tablespoon milk
  • ½ cup chopped fresh cranberries
  • ½ cup chopped peanuts use ice cream nut topping

Instructions

  • Cream butter, sugar, egg and vanilla with a mixer until fluffy. Add dry ingredients and beat just until combined. Wrap dough in a ball and cover with plastic wrap. Refrigerate for one hour.
  • Roll chilled dough onto a floured surface into a large rectangle.
  • Mix together brown sugar and milk and spread onto the dough, leaving a ½" edge all the way around. Sprinkle with cranberries and peanuts.
  • Roll up dough, starting with the long edge and wrap tightly with wax paper. Refrigerate overnight.
  • Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
  • Slice cookies into ¼" rounds and place 2" apart on prepared baking sheet.
  • Bake for 12 minutes or until just golden brown on the bottom.
  • Let set for 2 minutes on the pan to cool before transfering to a cooling rack to cool completely.
