Vegetable Loaded Crockpot Meatloaf Recipe

This Vegetable Loaded Crockpot Meatloaf is made in a crockpot so it's easy for you to make on those days when you won’t feel like cooking!

Ingredients

  • Blend all together the following:
  • 1 small yellow pepper
  • about 1.5 cups of fresh tomatoes
  • 2 handfuls of fresh spinach
  • 4-8 asparagus spears or large green beans
  • 1 medium onion
  • handful of mushrooms
  • You will use this liquid all mixed together with the meat.
  • Along with 2-3 cups of bread crumbs we made ours from scratch by blending day old bread and then toasting the crumbs in the oven until crispy. You can certainly use store bought as well.
  • Mix all of this together slowly with the following until everything holds together really well and doesn’t seem too wet or too crumbly and dry.
  • 1 pound of ground bison
  • 1 pound of ground pork
  • 1 pound of ground beef

Instructions

  • Press into the crockpot so that it is level and smooth.  Then use a fork to prick holes all over the top and coat with a layer of barbeque sauce.
  • Optional, we laid a few thin rings of a whole onion and sliced mushrooms on top.  Cover and cook for about 3-4 four hours (depending on how hot your crockpot runs).
  • The nice thing about a slow cooker is that it will keep all of the fats and liquid around the meat so you wont have to worry about it drying out quickly after the meat has finished cooking.
