Rinse the meat well, pat dry with a paper towel then rub the spices and herbs on the meat. Set in the bottom of your crock pot to rest while you prep the rest of the ingredients.
Thoroughly wash all the vegetables, peel the carrots and brussel sprouts then cut in half.
Add the water to the crock pot and then add in the potatoes and carrots. Cook for 6 hours on low or until the meat is tender and done (the actual cook time will really depend on the size of the meat and how your crock pot works so keep an eye on it the second half of the cook time to make sure it is done the way you prefer).
You may cook and add the brussle sprouts either of two ways:
Add the brussle sprouts when there is about 30 minutes left in the cook time.
or
Brown and cook in a pan with a little bit of pepper and oil then add to the stew when serving it, that is what we prefer.
