- 1 pound fresh brussel sprouts stems removed and shaved**
- ¼ cup red onion sliced thinly
- ¼ cup olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- salt and pepper to taste
In a large bowl, whisk together the olive oil, vinegar, honey and mustard. Taste and add salt and pepper to your liking.
Add the shaved brussel sprouts and red onion and toss thoroughly to combine. Taste again and adjust seasonings.
Cover and store in the refrigerator for 2-3 hours, stirring often.
Serve with fresh grated Parmesan on top! **
To shave the brussel sprouts I use a food processor, but you can also use a hand grater or knife.
