Shaved Brussels Spouts and Parmesan Salad Recipe

Ingredients

  • 1 pound fresh brussel sprouts stems removed and shaved**
  • ¼ cup red onion sliced thinly
  • ¼ cup olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • salt and pepper to taste

Instructions

  • In a large bowl, whisk together the olive oil, vinegar, honey and mustard. Taste and add salt and pepper to your liking.
  • Add the shaved brussel sprouts and red onion and toss thoroughly to combine. Taste again and adjust seasonings.
  • Cover and store in the refrigerator for 2-3 hours, stirring often.
  • Serve with fresh grated Parmesan on top! **
  • To shave the brussel sprouts I use a food processor, but you can also use a hand grater or knife.
