Pour the oil into the bottom of your oven safe pan.
Place the pieces of fish in the pan, coat with oil on both sides.
Add the crushed cracker to the top of the fish.
Zest one (washeclementine on top of the fish, then cut in half and squeeze the juice on top of everything.
Peel and divide the other clementines and place around the fish.
Cook at 400 degrees for about 12 minutes or until the fish is completely white and the thicker parts of the fish just barely start to flake apart on their own. Please keep in mind that the final cook time will completely depend on the size and thickens of the fish along with how your oven works. The fish should be done when it easily breaks apart when you check it with a fork.
We enjoyed this with some fresh steamed corn that we cut off the cob.
