Creole Cajun Shrimp Recipe


  • 2 cups brown rice cooked and kept warm
  • 2 tablespoons oil
  • 8 ounces frozen fajita blend vegetables onions, green peppers and red peppers
  • 2 tablespoons flour
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Cajun seasoning
  • 1 can 14.5 oz, diced tomatoes
  • 1 can 6 oz, tomato paste
  • 1/2 cup water
  • 1 lb uncooked shrimp (thawed if frozepeeled and deveined


  1. First, add the oil and bag of vegetables to skillet and cook until no longer frozen.

  2. Then, stir in the flour, seasonings and spices.

  3. Next, add the tomatoes, tomato paste and water and mix very well.

  4. Heat the mixture over medium heat just until it is boiling.

  5. Finally, stir in the shrimp and cover. The you will heat this for an additional 5 minutes, stirring frequently until the shrimp is thoroughly cooked.

  6. Serve it on a bed of brown rice.
