Carrot Cake Whoopie Pies

Ingredients

  • 1 package 15 oz Carrot Cake
  • ½ cup Flour
  • ½ cup Water
  • cup Oil
  • 3 Eggs
  • 1 tub Cream Cheese Frosting
  • Wilton Sparkle Gels in Orange and Green optional
  • Edible Easter Grass

Instructions

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • In a mixing bowl, add cake mix and flour and mix well.
  • Add water, oil and eggs and mix until combined.
  • Spoon onto prepared baking sheet (I use a 2 Tablespoon portion scoop) and gently spread the batter with the back of the scoop into a 2.5" circle.
  • Bake for 12 minutes and cool on a cooling rack.
  • When completely cool, frost the bottom of one whoopie pie and press another onto the frosting to create a sandwich.
