Balsamic Beef Roast Dinner Recipe

Ingredients

  • 3-4 lb beef roast
  • 1 lb baby carrots
  • 2 lbs small red potatoes
  • -If using larger red potatoes half or quarter
  • 1 cup beef broth
  • ½ cup brown sugar
  • ¼ cup balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon salt

Instructions

  • Place beef roast into a slow cooker and top with carrots and potatoes. Set aside.
  • In a mixing bowl, combine broth, brown sugar, vinegar, soy sauce, garlic and salt. Mix well and pour over roast and vegetables.
  • Cover and cook on low for 6-8 hours.
