Low Carb Broccoli Cheese Bake Recipe

Our Broccoli Cheese Bake is filled with tasty Broccoli, cheese and topped with Frenches fried onions!

Ingredients

  • 2 16 ounces frozen broccoli
  • ½ cup diced onion
  • 1 tablespoon butter
  • 1 can condensed cream of broccoli soup
  • 1 teaspoon Dijon mustard
  • 2 cups shredded cheddar cheese
  • 1 can french fried onions
  • 4 hard boiled eggs sliced to ⅛"

Instructions

  • Preheat oven to 350.
  • Cook broccoli according to package directions.
  • In a skillet, add onion and butter and heat 3-5 minutes or until onion is tender. Add soup and mustard and mix well. Heat until the mixture just begins to bubble.
  • In a casserole dish, arrange half of the broccoli in the bottom. Add half of the soup mixture, half of the eggs and half of the cheese. Repeat layer.
  • Bake for 20 minutes. Sprinkle on onions and bake for an additional 5 minutes.
  • Let set for a few minutes before serving.
