Breakfast Fun: A Towering Waffle Cake Recipe

  • 1.5 cups flour
  • 1 teaspoon baking soda
  • 1 cup mashed really ripe bananas
  • ½ cup coconut oil for batter plus more for cooking
  • ½ cup brown sugar
  • up to 1 cup almond milk add slowly until you get the consistency you want
  • dash of sea salt


  1. Mix your batter and heat your skittle to medium. Grease the skillet again after each waffle for perfectly crispy waffles.
  2. Allow the waffles to cool a little bit on a wire rack before stacking up. This will help the tower hold its shape and stand tall.
  3. When everything is ready, stack up the waffles on a cake platter and then load with your favorite toppings. We poured warm pure maple syrup down over the top of a mount of fresh berries, fresh mint and some pea shoots.
