Ingredients

  • 1 cup chopped cooked chicken breast (cut the pieces small, it needs to fit onto a cracker.)
  • 2 green onions cut
  • ¼ cup cut dried cranberries
  • 2 slices cooked and cooled bacon cut into small pieces - or try 1-2 Tablespoon of real bacon bits
  • 3 tablespoons creamy Caesar dressing
  • 1 tablespoon honey mustard
  • 1 box Triscuit Rosemary & Olive Oil Crackers
  • 1 handful spinach baby works best, but tear any size spinach to fit onto cracker or try romaine, cut or torn into small pieces

Instructions

  • Combine chicken breast, onions, cranberries, bacon, dressing and honey mustard. Mix well in a dish and refrigerate at least an hour.
  • Top crackers with spinach pieces and chicken mixture just before serving. (I use my tablespoon scoop to top crackers). Serve immediately.
