One Dish Dinners: Chicken & Black Beans Skillet Recipe

Ingredients

  • 1 lb chicken breasts
  • 1 tablespoon oil
  • 1 can 15 oz, black beans, drained and rinsed
  • 1 cup salsa hot, medium or mild
  • 1 cup shredded cheddar cheese

Instructions

  1. Add oil and chicken to a skillet and cook on medium high until halfway done.
  2. Stir in beans and salsa bring just to a boil. Reduce heat and cover, cooking for 15-20 minutes or until the chicken is cooked through.
  3. Add cheese and serve with beans and salsa.
