Simple Summer Berry Cobber Recipe

Ingredients

  • 3 cups fresh blueberries
  • 1 tablespoon lemon juice
  • ¾ cup SPLENDA® Sugar Blend divided
  • ½ cup butter cubed
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 1 egg lightly beaten

Instructions

  • In a small pan, add the berries, lemon juice and ½ cup of sugar. Bring mixture to a boil and then set aside. Place butter in a baking dish and melt in the microwave for one minute.
  • Combine the remaining sugar with flour, baking powder, salt, milk and egg in a large bowl. Mix well, then pour over your melted butter.
  • DO NOT STIR!
  • Spoon your berry mixture over the batter - again, DO NOT STIR!
  • Bake at 350° for 40-45 minutes or until golden brown. When serving, flip the serving over so that the crust is on top!
