Preheat the oven to 350 degrees.
Saute the veggies in olive oil over medium heat for about 15 minutes, until totally tender.
Add all of the remaining ingredients and reduce to a simmer, stirring occasionally for about 30 minutes.
Meanwhile, cook pasta according to package directions.
Once the pasta is cooked, drain and add both the simmering sauce and the pasta to a 9x11 casserole dish and stir the mozzarella cheese in.
Bake for 20 minutes.
