Chicken Cacciatore Bake Recipe

Ingredients

  • 2 lbs shredded COOKED chicken
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 cups of mushrooms quartered
  • 1 can of of tomato sauce 16 ounces
  • 1 15 ounce can of diced tomatoes with green chiles
  • 1 teaspoon of italian seasonings
  • 1 teaspoon of garlic salt
  • 2 tablespoons of olive oil
  • 1 cup of mozzarella cheese
  • 1 box of Barilla® Organic Penne Pasta

Instructions

  • Preheat the oven to 350 degrees.
  • Saute the veggies in olive oil over medium heat for about 15 minutes, until totally tender.
  • Add all of the remaining ingredients and reduce to a simmer, stirring occasionally for about 30 minutes.
  • Meanwhile, cook pasta according to package directions.
  • Once the pasta is cooked, drain and add both the simmering sauce and the pasta to a 9x11 casserole dish and stir the mozzarella cheese in.
  • Bake for 20 minutes.
