Author Jennifer

Ingredients

  • 1 C. butter melted
  • 2 C. packed brown sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 C. flour
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ½ tsp. salt
  • 1 C. chocolate chips
  • For the decoration:
  • 2-3 tubes of Wilton sparkly orange gel icing
  • 1 tube of Wilton green sparkly gel icing
  • Pumpkin shaped cookie cutter
  • toothpicks

Instructions

  • Preheat the oven to 350 degrees and line a 9x13 baking dish with parchment paper.
  • Combine the flour, baking powder, baking soda and salt and set aside.
  • In a separate bowl, combine the melted butter, brown sugar, 2 eggs and vanilla extract mixing well.
  • Slowly fold in the dry flour mixture into the wet mixture.
  • Add in the chocolate chips.
  • Pour the batter evenly into the 9x13 baking dish.
  • Bake 25-30 minutes.
  • Allow the bars to cool completely prior to decorating.
  • For decorating:
  • Once the bars have completely cooled, use the Pumpkin cookie cutter to cut the cookie bars. Try to get them as close as possible so you are not wasting space. You can get 6 shareable (large) pumpkins from one 9x13 pan of cookies.
  • Outline each cookie bar with orange icing and then fill in using the toothpicks to help cover the pumpkin (see photos).
  • Use the green sparkly gel for the top.
  • Repeat with all the cookie bars.
