In a shallow bowl, combine parsley, paprika, sage, thyme, mustard, oregano, salt and pepper. Mix well. Dredge pork chops into spice mixture, coating both sides.
Add oil to a large dutch oven and heat over medium high. Once oil is hot, add pork chops, searing on each side, about 2-3 minutes each side. Remove from heat and pour in chicken broth.
Cover and place in the oven for 25-30 minutes or until internal temperature measures 145 degrees F.
