    #LawrysMoms Recipe: Sweet and Spicy Mediterranean Chicken Salad

    A few years ago, I went to a party where the hostess had made chicken salad for us to snack on. Except that her chicken salad was unlike any I'd ever eaten before - it had cranberries, apples and walnuts in it!

    I was used to super simple chicken salad: chicken and mayonnaise, salt and pepper...not very exciting.

    Ever since that party, I've been experimenting with adding different things to my chicken salad, like apples, pecans, dried cranberries, raisins, etc. Some of the recipes have been an utter flop and I've had to feed the concoction to the dogs...but there have been quite a few winners!

    I decided to try Lawry's brand new Fire Roasted Chile and Garlic course ground blend...I made a trial run with just enough for one salad or sandwich, just in case it was a flop. I was aiming for something a little Mediterranean inspired - raisins, apples, chile and garlic?

    I've never actually cooked Mediterranean food, so I just winged it.

    Isn't experimental cooking more fun that way?

    Ingredients

    ½ teaspoon Lawry's Fire Roasted Chile and Garlic Course Ground Blend seasoning

    6 tbs Hellman's Mayonnaise

    1 lb Chicken - I prefer thigh meat because I find it to be more moist, but any kind will do

    ½ Granny Smith Apple

    ⅓ cup California Raisins

     

    Directions

    Cook your chicken until done, and remove all fat. I boil mine with a little Lawry's Fire Roasted Garlic Salt!

    Chop or shred your chicken to your desired consistency and put into a medium sized bowl.

    Finely chop your apple and add into the chicken, then add your raisins.

    Add your mayo and seasoning and mix thoroughly.

    Now, I've given my measurements for everything based on my preferences. If you like your chicken salad less "wet" then decrease the mayo, if you like it more spicy, add more Lawry's Fire Roasted Chile and Garlic seasoning.

    The first batch I made, I just topped a green salad with. The spicy heat and sweetness from the Mediterranean chicken salad was a fantastic combination - and of course I didn't need any dressing!

    The next batch I made, I just ate on a sandwich. I added a little extra Lawry's Fire Roasted Chile and Garlic seasoning and it definitely kicked it up a notch!

    Of course, after I finished my sandwich, I had to create another Lawry's Dinnertisement because I had so much fun creating the first one!

      Fire Roasted Chili and Garlic? zomg, that sounds so good! I love the combination of spicy and sweet--I bet it worked really well with the apples and raisins!

      I can relate... I used to make very basic (plain) chicken salad. Now, I like to experiment with different ingredients. Yours sounds yummy! And I bet it would be good on a croissant.

      I had never heard of the seasoning - Fire roasted chile & Garlic but it sounds FABulous! I'm going to get some today, & make that chicken salad. What a great twist to a routine thing like chicken salad! Thanks.... 😉
