    No Bake Peanut Butter Bars Recipe

    Angeline and I are huge fans of Reese's Peanut Butter cups, but I try to keep candy out of the house as much as possible since I've lost this weight. When we get the urge for a peanut butter cup, I have been whipping up a small batch of this no bake peanut butter bars recipe and it always hits the spot!

    The peanut butter mixture is soft and creamy, just a little lighter than the peanut butter filling in Reese's Peanut Butter Cups! And you can alter this no bake peanut butter bars recipe each time you make it by using different peanut butters and alternating the milk chocolate chips with dark chocolate, bittersweet chocolate - the possibilities are endless!

    No Bake Peanut Butter Bars Recipe

    Ingredients

    1 cup melted butter
    2 cups Ritz crackers, smashed into crumbs
    2 cups confectionersโ€™ sugar
    1ยฝ cups peanut butter
    ยผ cup peanut butter
    2 cups milk chocolate chips

    Directions

    Combine your butter, cracker crumbs, sugar and 1 ยฝ cup peanut butter in a large bowl and beat at medium speed until the mixture is creamy and smooth. Pour into a 9ร—13 baking dish and set aside while you make the topping.

    Combine ยผ cup peanut butter and the milk chocolate chips in a microwave-safe glass bowl, and cook in 45 second increments, stirring between each increment, for about 2 minutes. Do not over cook the chocolate, as once you burn chocolate, there is no going back!

    Pour on top of your peanut butter mixture in the banking dish and swirl with a toothpick until you reach your desired pattern.

    Refrigerate for a few hours until your peanut butter bars are set. Once chilled and firm, cut into bars before serving.

      These look so good! One question though... in your ingredient list, you have "Ritz crackers", but in the directions you say "graham crackers". I was just wondering if it's Ritz or graham crackers. (I guess the Ritz crackers would give it that sweet and salty taste, and the graham crackers would give it a sweet taste...I bet either would work. ๐Ÿ™‚

      Ha ha! Originally I was going to use graham crackers but my daughter age them all - so I used Ritz crackers! I must have forgotten to change my post. The ritz crackers aren't salty enough for you to really taste the salt, but I think it's just enough to add a little extra flavor! ๐Ÿ™‚

      I made these bars and they are every bit of yumminess that you would anticipate! However, I had to put the bars in the freezer to truly set them. Then as they warmed up when they were served, they became crumbly and hard to manage. Wondering if I could use less butter or more crackers to reach desired "set" at room temp.

      I love peanut butter and fluff or jelly on Ritz, so this recipe is up my alley. I also like the no bake factor in this recipe.
