Sweet Potato Haddock Bake


  • 2 large sweet potatoes
  • 1.5 pounds of fresh haddock
  • ½ cup bread crumbs
  • sea salt pepper and thyme
  • 2 tablespoons olive oil


  1. Wash, peel and grate the sweet potato.  Then spread evenly in a large oven safe baking dish.  Drizzle with the olive oil.
  2. Cut the fish or place the filets on top of the sweet potatoes. 

  3. Sprinkle with the sea salt, pepper and thyme and then cover just the tops of the fish with the bread crumbs. 

  4. Bake at 400 degrees for about 12 to 14 minute or until the fish is solid white, starting to flake apart and the sweet potatoes are cooked through and browning at the edges.  If desired, you can remove the fish and cook the sweet potatoes for additional time to brown even more, we enjoyed it coming out of the oven all at once though.
