Mini Peanut Butter Cheesecakes in Jars

Makes approximately 10 servings. 1 jar = 1 serving. Store in the fridge 1-2 weeks with the lids on.

Ingredients

  • 1 C. Oreo Cookie crumbs
  • 3 tbs. butter or margarine melted
  • 1 package of cream cheese softened 8 oz.
  • 2/3 C. creamy peanut butter
  • 1 tsp. vanilla extract
  • Whipped cream optional
  • Reese's Pieces optional but fun!
  • 10 4 oz. jelly jars

Instructions

  1. In a small bowl, combine the Oreo crumbs with the melted butter. The mixture will be crumbly. Use a tablespoon and scoop 2 tbs. of the mixture into the bottom of each jelly jar. Gently press it down with your fingers.
  2. In a medium bowl combine the peanut butter, vanilla extract and cream cheese. Use a hand mixer and beat 2-3 minutes on the medium speed until nice and smooth.
  3. Scoop the cream cheese and peanut butter mixture into your jars filling almost to the top. Place the jars in the fridge to set 3-4 hours.
