Homemade Holiday Gifts: Oatmeal Gingerbread Cookies Recipe

  • 3/4 cup flour
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup cookie butter
  • 1 stick 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup quick cooking oats


  1. Add flour, ginger, baking soda, salt and baking powder in a small bowl and mix well. Set aside
  2. Beat butter, white and brown sugar together in a mixing bowl until light and fluffy, about 3-5 minutes, scraping down the bowl several times. Add egg and vanilla and beat well. Beat in flour and oat mixture just until combined.
  3. Refrigerate, covered, for 3 hours.
  4. Remove from refrigerator and preheat oven to 350 and line a baking pan with parchment paper. Using a 2 tablespoon size cookie scoop, scoop batter and drop onto prepared banking sheet.
  5. Bake for 15-17 minutes or until bottoms begin to brown. Remove from oven. let cool on baking sheet for 2 minutes before transferring to a cooling rack to cool completely.
