Spicy Cole Slaw

Ingredients

  • For the slaw:
  • 1 head purple cabbage shredded
  • 1 red onion sliced thin
  • Optional Thinly sliced carrots
  • ¼ cup chopped cilantro leaves
  • For the dressing:
  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tablespoons mayonnaise
  • 1 heaping tablespoon of minced garlic
  • 1 cup or so of green onions with tips cut off and broken up
  • 2 serrano chiles
  • Salt and pepper generously

Instructions

  • To prepare the dressing, add all dressing ingredients into a blender until completely blended/juiced, then add to the slaw vegetables in the large bowl; toss gently.
