Hot Cocoa Cookies

  • Preparation:
  • Melt the chocolate and butter. Let it cool down.
  • In a bowl, whisk flour, cocoa powder, baking powder and salt.
  • Using a mixer, beat the sugar, eggs and vanilla at low speed until smooth.
  • Add the cooled chocolate and beat until smooth.
  • Put the dough in the refrigerator for at least 1 hour.
  • Preheat the oven to 325* F. and cover 2 baking sheets with baking paper. Make identical dough balls. Spread the balls on a baking sheet at a small distance from each other, then lightly press the dough with your fingers on top.
  • Bake the cookies for about 12 minutes.
  • cut a large marshmallow in half. When the cookies are baked, take them out of the oven and press half of the marshmallows (cut side down) into the center of each cookie. Return the cookies to the oven and bake for another 2-3 minutes. Let the cookie pan cool for a few minutes, then transfer the cookies to cool.
  • Prepare the icing for the cookies.
  • Mix all the ingredients in a medium bowl and whisk with a whisk. Put a small amount of glaze on the top of each marshmallow and lightly smear it with the back of a spoon.
  • Let the glaze set for about 30 minutes before serving.
