Valentine Sugar Cookie Cups Recipe

This Valentine Sugar Cookie Cups Recipe is filled with frosting and covered with Valentine's Day sprinkles!

Ingredients

  • 1 pouch 17.5 oz, sugar cookie mix
  • butter and egg called for in the cookie mix
  • ¼ cup about 1.5 oz Valentine sprinkles (to stir into cookie mix)
  • 1 tub white frosting
  • Valentine sprinkles for decorating

Instructions

  • Heat oven to 375 and spray mini muffin cups with nonstick cooking spray. Set aside.
  • In a mixing bowl, add sugar cookie mix. Add softened butter and eggs and mix until a soft dough forms. Dough will be stiff and I tend to do this part with my hands as it's easier. Add ¼ cup sprinkles and mix well. I like to knead in with my hands.
  • Use a 1 tablespoon portion scoop to scoop dough and roll into a ball. Place into prepared baking pans. Use a pastry blender to press into pan. Bake for 8-10 minutes or until light golden brown. Remove from oven and let cool for 20 minutes before removing from pan. You can easily pop them out with a small knife. Let cool completely on a wire rack.
  • Place frosting into a piping bag fitted with a tip. Pipe into cookies and top with Valentine sprinkles.
