Add carrots, celery, and onion to a slow cooker and mix well. Add bay leaf and chicken on top of vegetables.
In a separate and small bowl, combine soup, water, thyme, salt and pepper and mix well. Spoon over chicken and cover.
Heat on low for 8 hours or on high for 4 hours. When cooking cycle is complete, shred chicken with two forks. Stir peas and noodles into mixture and serve.
