Mini Peanut Butter Cheesecakes in Jars

Equipment

  • 10 4 oz. jelly jars

Ingredients

  • 1 C. Oreo Cookie crumbs
  • 3 tbs. butter or margarine melted
  • 8 oz cream cheese softened 8 oz. package
  • C. creamy peanut butter
  • 1 tsp. vanilla extract
  • Whipped cream optional
  • Reese's Pieces optional but fun!

Instructions

  • In a small bowl, combine the Oreo crumbs with the melted butter. The mixture will be crumbly. Use a tablespoon and scoop 2 tbs. of the mixture into the bottom of each jelly jar. Gently press it down with your fingers.
  • In a medium bowl combine the peanut butter, vanilla extract and cream cheese. Use a hand mixer and beat 2-3 minutes on the medium speed until nice and smooth.
  • Scoop the cream cheese and peanut butter mixture into your jars filling almost to the top. Place the jars in the fridge to set 3-4 hours.

Notes

Makes approximately 10 servings. 1 jar = 1 serving. Store in the fridge 1-2 weeks with the lids on.
