Spicy Black Beans

Ingredients

  • ​2 cans reduced sodium black beans rinsed and drained
  • 1 red onion chopped
  • 1 large jalapeno pepper minced
  • 2 gloves garlic minced
  • 1 large red bell pepper chopped
  • 1 TBS olive oil
  • 2 limes juiced and juice set aside
  • salt
  • 1/2 tsp chili powder any variation is great here - adobo, chipotle, etc​
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup minced fresh green onions

Instructions

  1. In a large skillet, add olive oil and heat over medium/high heat. Add onion, jalapeno, garlic, and red pepper; saute for 3-4 minutes or until becoming tender.
  2. Add lime juice; saute 1 minute.
  3. Add beans to skillet, stir to combine, and saute 2 minutes.
  4. Add chili powder, dash of salt, cilantro, and green onions; stir and saute 1 more minute. Serve immediately.
