Bountiful Bunny Peep Easter Cake Recipe

Ingredients

  • 1 box white cake mix and ingredients to make cake oil, eggs water or use your favorite cake recipe for 2 round pans
  • 2 tubs white frosting
  • I'm pretty generous with my frosting so maybe you can get away with one tub. I like to put more in the center since you don't frost the outside of the cake.
  • Bunny Peeps * you will need at least 26 bunnies for an 8" round cake.
  • Edible Easter Grass
  • Food Coloring or Color Gels

Instructions

  • Prepare cake according to package or homemade recipe. Before baking, split batter evenly into two bowls. Add pink food coloring to one bowl and mix well. Pour into round pan. Repeat for purple batter.
  • Bake according to package directions and let cool completely. Once cool, cut each round cake so you have 4 rounds.
  • Alternate layers of colored cake onto a cake stand and frost between each layer. Add a large dollop of frosting on top of the came and smooth until you have about a 6" diameter circle of icing on the top. Do not frost the outer layers of the cake. This is called a "naked cake"
  • Cut Easter grass in 1-2" pieces (I use kitchen shears). Sprinkle grass around outside of the top dollop of frosting and around the bottom of the cake.
  • Cut each bunny peep apart. I like to use kitchen shears for this task as well.
  • To attach the bunnies to the bottom of the cake, add a dab of frosting across their back and then press it into the side of the cake. Repeat until the whole cake is covered. Add additional Easter grass if you see any bare spots.
  • To add the bunnies to the top, gently place them upright, into the icing, forming a circle.
  • Slice & Enjoy.
