- 4 cups chicken stock
- 2-3 tablespoon fish sauce
- 1 tablespoon Thai red curry paste (easily available online or in supermarkets)
- 1 tablespoon chili paste
- 1 stalk lemongrass
- 2 cups cooked chicken (or any meat of your choice)
- Fresh cilantro and juice of 1 lime
- Minced hot peppers
Put the chicken stock in a soup pot, along with the ginger, scallion, lemongrass, and sliced hot peppers. Simmer over medium heat for 15 minutes. - 500g pork
- 100g garlic

- 1 teaspoon coconut sugar
Prepare the marinade by mixing light soya sauce, black pepper, oyster sauce, and coconut sugar. Mix well to combine all the ingredients. Then, cut the pork into small cubes and place it in the marinade bowl. Keep it refrigerated for about twenty minutes.
In the meantime, you can pound the garlic. When the pork is marinated, mix the garlic and 2 tablespoon of wheat flour. Deep fry until golden brown.

- 1 small green papaya
- 1 medium garlic clove, minced

Pad Thai
This is a classic! Here’s what you need:
- Rice noodles

- Garlic cloves and shallots
