Mix all of the ingredients in a medium size bowl until you get a dough, and make sure it is kneaded well enough that you can form a ball from the dough.
Divide the Arepa dough into four even dough balls.
Dip each dough ball in a bowl of cold water, so that it does not stick, and then place the dough ball onto a piece of nonstick plastic wrap.
Fold the plastic wrap over the ball and press down with a plate. Make them as thick or thin as you like. Repeat this with each ball of dough.
In a medium skillet pan, heat a little bit of vegetable oil over medium heat and fry each arepa for about 2-4 minutes on each side, or until the edges begin to turn golden brown.
Be careful not to overcook the Arepas! Then add cheese on top of the arepa and let it melt on low heat for a few more minutes.
