Grilled Chicken Parmesan Sandwiches

Ingredients

  • 4 ciabatta rolls cut in half and toasted
  • 4 chicken breasts cut smaller to fit the rolls
  • salt and pepper
  • 4 slices provolone cheese cut in quarters
  • 4 tablespoons basil pesto
  • ½ cup marinara sauce warm
  • grated parmesan cheese
  • fresh basil leaves

Instructions

  • Season chicken breasts with salt and pepper.
  • Preheat a grill and cook chicken, on both sides, until no longer pink the the center.
  • Turn off the grill and add 4 quarters of cheese to each chicken breast. Let stand to melt.
  • Top the roll with chicken, a dollop of marinara, grated parmesan cheese and fresh basil leaves.
  • Spread 1 tablespoon pesto on the top roll and place to make a sandwich.
  • Serves 4, 1 sandwich each.
