Air Fryer Sausage Stuffed Mushrooms

Ingredients

  • 1 lb large fresh mushrooms
  • 1 tablespoon butter
  • ¼ cup diced red onion
  • 1 teaspoon minced garlic
  • 4 ounces Italian sausage cooked and crumbled
  • 2 tablespoons Italian style breadcrumbs
  • ½ cup shredded Mozzarella cheese plus more for topping
  • ¼ cup grated Parmesan cheese
  • salt and pepper
  • chopped fresh parsley

Instructions

  • Remove the stems from the mushrooms and mince. Use a spoon to scrap any additional mushroom out of the inside of the cap and dice.
  • Add mushrooms pieces, butter, onion and garlic to a skillet and heat on medium high until onions are tender, about 5 minutes. Add sausage and cook for 1 minute. Remove from heat.
  • Add bread crumbs, ½ cup Mozzarella cheese, Parmesan cheese and mix well. Season with salt and pepper. Spoon into each mushroom cap.
  • Preheat air fryer for 5 minutes at 320 degrees F. Place mushrooms, filled side up, into the air fryer. Heat for 12 minutes at 320 until golden. Top with additional Mozzarella cheese and close air fryer for 2 minutes or until cheese is melted.
  • Serve topped with chopped fresh parsley.
  • Serves 2-3.
