Valentine Cheesecake Bars with Oreo Cookie Crust

This Valentine's Day Cheesecake Bars Recipe has an Oreo Cookie Crust and makes for an easy dessert recipe!

Ingredients

  • 30 regular Oreo cookies
  • 4 tablespoons melted butter
  • 3 blocks 8 oz each, cream cheese, softened
  • 1-½ cups white sugar
  • ¼ cup sour cream
  • ¼ cup all purpose flour
  • 2 teaspoons vanilla
  • 3 eggs
  • red and pink gel food coloring
  • Valentine sprinkles

Instructions

  • Preheat oven to 350 and grease a 9x13 baking pan with nonstick cooking spray. Set aside.
  • Add oreos to a food processor and process for 5 seconds or until cookies are crumbs. Add melted butter and process for 10 seconds or until combined well. Press into prepared pan with the back of a spoon. Bake for 10 minutes. Remove from oven and cool completely.
  • Add cream cheese, sugar, sour cream, flour, vanilla and eggs to a mixer and beat well until combined. Divide batter into thirds and add red food coloring to one bowl and pink to another, leaving the third bowl white.
  • Add dollops of cheesecake mixture on top of crust. Use a knife to swirl the colors and spread evenly. Shake pan to create an even top, too.
  • Place a separate baking pan in the bottom rack of the oven and fill with water. Add the cheesecake to the center rack and bake for 45-20 minutes or until center is nearly set. Cool in the pan for 1 hour and refrigerate overnight.
  • When ready to serve, top with Valentine sprinkles and cut into squares to serve.
