Preheat oven to 350 and grease a 9x13 baking pan with nonstick cooking spray. Set aside.
Add oreos to a food processor and process for 5 seconds or until cookies are crumbs. Add melted butter and process for 10 seconds or until combined well. Press into prepared pan with the back of a spoon. Bake for 10 minutes. Remove from oven and cool completely.
Add cream cheese, sugar, sour cream, flour, vanilla and eggs to a mixer and beat well until combined. Divide batter into thirds and add red food coloring to one bowl and pink to another, leaving the third bowl white.
Add dollops of cheesecake mixture on top of crust. Use a knife to swirl the colors and spread evenly. Shake pan to create an even top, too.
Place a separate baking pan in the bottom rack of the oven and fill with water. Add the cheesecake to the center rack and bake for 45-20 minutes or until center is nearly set. Cool in the pan for 1 hour and refrigerate overnight.
When ready to serve, top with Valentine sprinkles and cut into squares to serve.
