Cut the center out of each biscuit with a round cutter or a kitchen gadget such as an apple corer. A bottle cap also works well.
Heat about 2" of hot oil over a stove and working in batches, add a few donuts at a time, frying until golden brown and flipping over and frying the other side. Drain on paper towels.
Mix together white sugar and pumpkin pie spice and dredge donuts into sugar mixture, coating on each side.
