Sweet Potato Cheesecake Bars Recipe Crust Directions:
Preheat oven to 350. Grease a 9x13 baking pan with nonstick cooking spray and set aside.
Beat cake mix, butter and egg together in a bowl. Mixture will be crumbly before it comes together as a dough. Press into prepared pan and set aside.
Sweet Potato Cheesecake Bars Recipe Filling Directions:
Add sweet potatoes to a mixer and beat well until smooth. Add cream cheese, sugar, egg and pumpkin pie spice and geat until smooth. Pour cover crust and spread evenly.
Bake until center is almost set, about 20-25 minutes. While baking, put together the topping.

Add sour cream, sugar, and vanilla in a small bowl and mix well. In a separate bowl, combine granola, baking chips and pumpkin pie spice and mix well.
When cooking is complete, spread sour cream mixture over the top of the bars. Sprinkle with granola mixture. Bake for an additional 6-8 minutes. Cool completely on a wire rack before refrigerating at least 4 hours before serving.
Slice into 24 bars and serve. Store covered in the refrigerator.
