Vegetarian Avocado Pasta

Ingredients

  • 1 lb box of your favorite pasta we used medium shells so were would be plenty of space for the super creamy sauce to fill in.
  • 1-2 really ripe avocados depending on size, pit size…
  • 2-4 tablespoons extra virgin olive oil or avocado oil
  • salt and pepper to taste
  • optional: fresh corn cut off the cob / fresh tomatoes sliced

Instructions

  • Cook your pasta according to box instructions.
  • While that is boiling you can wash the avocados, cut them and remove the pit and then scoop the fruit into the blender along with the oil and a little bit of salt to start.
  • Blend on high until you have a super smooth and creamy texture.
  • If the avocados are at the right spot of ripeness this should only take a few seconds.
  • Taste and add additional seasonings accordingly.
  • When the pasta is done cooking strain as usual, return to the pot and toss with the avocado sauce.  Plate and top with the warm fresh corn and chilled tomatoes along with a pinch of sea salt.
