Pour sprinkles into a shallow plate. Set aside.
Place cookies onto a flat surface. Place 1 scoop of ice cream onto the cookie and gently flatten with a knife until it's about ½" thick. Add the cookie on top and gently press the cookie into the ice cream. Use a knife to smooth the ice cream around the edges of the cookies. Dunk in sprinkles.
Wrap sandwiches in plastic wrap and return to the freezer for an hour. Store in the refrigerator for up to a week or serve after being frozen for an hour.
