Creole Cajun Shrimp Recipe

Ingredients

  • 2 cups brown rice cooked and kept warm
  • 2 tablespoons oil
  • 8 ounces frozen fajita blend vegetables onions, green peppers and red peppers
  • 2 tablespoons flour
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon Cajun seasoning
  • 1 can 14.5 oz, diced tomatoes
  • 1 can 6 oz, tomato paste
  • ½ cup water
  • 1 lb uncooked shrimp (thawed if frozepeeled and deveined

Instructions

  • First, add the oil and bag of vegetables to skillet and cook until no longer frozen.
  • Then, stir in the flour, seasonings and spices.
  • Next, add the tomatoes, tomato paste and water and mix very well.
  • Heat the mixture over medium heat just until it is boiling.
  • Finally, stir in the shrimp and cover. The you will heat this for an additional 5 minutes, stirring frequently until the shrimp is thoroughly cooked.
  • Serve it on a bed of brown rice.
