Southwest Quiche

This Southwest Quiche has lots of protein, veggies and tons of spices and seasonings that really kick the flavor up a notch!

Ingredients

  • 1 pie crust refrigerator section
  • 1 cup ham diced
  • ½ cup red pepper diced
  • ½ cup green pepper diced
  • ¾ cup cheddar cheese shredded
  • 10 eggs
  • 1 cup milk
  • ½ teaspoon oregano
  • ½ teaspoon thyme
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Preheat oven to 375 and spread a pie crust into a pie plate. Press into the bottom and up the sides. Add ham, peppers and cheese to the crust.
  • In a separate bowl, add eggs and milk and whisk well. Add spices and mix well. pour over crust.
  • Bake for 15 minutes at 375.
  • Open oven and add foil to cover the crust only. Reduce heat to 350 and continue to bake for 25-30 minutes or until knife inserted in the center comes out clean.
  • Let stand for five minutes before cutting into 8 slices.
